The summer of 2018. My boyfriend and I were travelling to Brussels by bus, so we made these sandwiches to take with us. When we arrived we found a lovely park bench under the trees, covering us with sun spots. There we got to bite into these amazing sandwiches. Good memories!
What you need (for 2 big sandwiches)
1 tablespoon of pesto (I use a nut- free version)
6 slices of prosciutto di Parma
2 balls of mozzarella (125gr each)
> You can serve these with some cherry tomatoes on the side
How to make them
Bake the ciabatta in the oven according to package instructions. Let it cool slightly (or fully if you plan on taking it with you for later).
Cut the ciabatta in two and slice each half open.
Spread half a tablespoon of pesto on the bottom of each half.
Tear your mozzarella into pieces and put it on top of the pesto. Add freshly ground black pepper.
Roughly fold your prosciutto and put it on top.
Close the sandwich and enjoy!
