Orzo Mozzarella Cucumber Tuna salad

The dinner we make when we don't really want to make dinner. I've made this recipe knifeless, because if you don't feel like cooking, you probably don't want to do mega dishes either. Let's go!

You'll need (for 2 people)

  • 50 gr Orzo pasta

  • 1/2 a cucumber

  • 1 can of good quality tuna

  • 2 balls of mozzarella

  • 1 tsp of olive oil

> If you feel fancy you can add a teaspoon of italian herbs after adding the tuna.


How to make it

  1. Cook your orzo pasta in boiled salted water according to the time on the package.

  2. Drain the pasta in a sieve, rinse with cold water and add a little olive oil. Stir through.

  3. Divide the pasta over two bowls.

  4. Use a potato peeler to slice round slices from the cucumber, do this above the bowls so they immediately fall in.

  5. Drain the mozzarella and tear it into big chuncks using your hands, add to the bowls straight away.

  6. Drain the tuna if necessary and add divide over the two bowls.

  7. Crack over a good amount of black pepper before stirring through and digging in. Enjoy!
