Crunchy cinnamony oats with juicy raisins. covered in sweet maple syrup. Every time I open the jar in the morning it just instantly makes me happy.
I really love crunchy granola in my yoghurt in the morning, but I always struggle to find one. Most granolas contain nuts, which my boyfriend is allergic to, so they are not an option. Then you have these lovely recipes to make mega batches of granola in the oven, but our oven is tiny and I can't be bothered to open the oven several times and stir it, for 30-40 mins or so.
So I came up with this speedy, lazy, but just as good, Pan Granola. Honestly, the options are endless. Add seeds, no dried fruit, all the dried fruit, sweeten with honey or maple syrup, whatever you like. This is just an example of what you can make.
For 5-6 portions you'll need
180 gr of rolled oats
3 teaspoons of ground cinnamon
2 tablespoons of neutral oil (like sunflower oil)
3 tablespoons of maple syrup
90 gr soaked and drained raisins

How to make it
Pop everything into a non- stick frying pan and heat on medium- high.
Stir every now and then, but also give it a chance to caramelise.
While it is baking grab a cooling rack lined with baking paper.
When the oats are golden brown, dump it onto the rack. Press down a little with a spoon or your stirring utensil from before.
Let it cool and break down into pieces.
